These oatmeal energy bites are perfect for a holiday snack, pre-movie treat, or even as a quick breakfast on busy mornings.

Ingredients
1 cup rolled oats (gluten-free if needed)
1/4 cup almond butter (or any nut butter, unsweetened and unsalted)
2 tablespoons honey (or maple syrup for a vegan option)
1/4 cup shredded coconut (unsweetened)
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 tablespoons ground flaxseed (optional, for added nutrition)
1–2 tablespoons water (as needed for consistency)
Preparation
Mix the Ingredients:
In a medium bowl, combine the rolled oats, almond butter, honey, shredded coconut, cinnamon, vanilla extract, and flaxseed (if using).
Combine Thoroughly:
Stir the mixture with a spoon or use your hands until the ingredients are fully incorporated. If the mixture is too dry, add 1–2 tablespoons of water, one at a time, until it holds together.
Roll into Bites:
Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a bite-sized ball. Repeat until all the mixture is used.
Chill:
Place the bites on a plate or baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Serve and Enjoy:
Store the energy bites in an airtight container in the refrigerator for up to 1 week.
