About the Recipe

Ingredients

  • 2 slices of whole-grain bread

  • 2–3 tablespoons of low-fat cream cheese or hummus

  • ½ cucumber, peeled, seeded, and thinly sliced

Preparation

  1. Lightly toast the bread if you prefer, as toasted bread can sometimes be easier to digest.

  2. Spread a thin layer of low-fat cream cheese or hummus on each slice of bread.

  3. Layer the cucumber slices evenly on one slice of bread.

  4. Top with the second slice, gently press down, and cut into quarters or halves.
