This acid-friendly cauliflower crust pizza is light, flavorful, and tailored to minimize reflux triggers. Packed with nutritious toppings and free from acidic ingredients, it’s a delicious alternative for those with acid reflux.

Ingredients
For the Crust:
1 medium head of cauliflower (about 4 cups grated)
1 large egg
1/2 cup part-skim mozzarella cheese (shredded)
1/4 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder (optional)
Pinch of salt
For the Toppings:
2 tablespoons olive oil or pesto (as a base)
1 cup fresh spinach
1/2 cup sliced zucchini
1/2 cup mushrooms, thinly sliced
1/4 cup goat cheese or part-skim mozzarella (optional, use sparingly)
1 grilled chicken breast, thinly sliced (optional for added protein)
Fresh basil leaves (for garnish)
Preparation
Step 1: Prepare the Cauliflower Crust
Preheat your oven to 400°F (200°C). Line a baking sheet or pizza stone with parchment paper.
Remove the florets from the cauliflower and pulse them in a food processor until they resemble rice.
Steam or microwave the riced cauliflower for about 5 minutes, then let it cool. Once cool, place it in a clean kitchen towel and squeeze out as much moisture as possible.
In a large bowl, mix the cauliflower, egg, mozzarella, Parmesan, oregano, garlic powder, and salt until combined.
Spread the mixture onto the prepared baking sheet in a circular shape about 1/4 inch thick.
Bake the crust for 20–25 minutes, or until it’s golden brown and firm.
Step 2: Add the Toppings
Remove the crust from the oven and let it cool slightly.
Brush the crust with olive oil or spread a thin layer of pesto.
Evenly distribute the spinach, zucchini, mushrooms, and grilled chicken slices (if using) over the crust.
Sprinkle goat cheese or mozzarella on top, if desired.
Step 3: Bake the Pizza
Return the pizza to the oven and bake for an additional 8–10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a minute or two.
Step 4: Garnish and Serve
Top with fresh basil leaves for a burst of flavor.
Slice and serve warm.
